Fifty centimetres is the middle of the range and the length most shops sell by default, which means the real decision moves somewhere else. It moves to how many stems you order, and to what you expect that number to look like when it is standing on a table.

A bouquet fills space in two directions at once.

Height and width trade against each other, and the trade is not obvious from a photograph. Fifteen stems at fifty centimetres read as a proper armful in a normal room. The same fifteen at forty look modest on a dining table, while at seventy they look thin, because the extra length spreads the same heads over more air and the gaps between them start to show. So the count and the length get chosen together. Move up a step in length and keep the number the same, and the bouquet becomes taller and looser rather than bigger.
