Ecuadorian roses in Bali: what height does to a room
Height changes where the flowers live. A tall arrangement works on the floor, on a console against a wall or on a side table, and it fails in the middle of a dining table because nobody can see the person opposite.
That settles more orders than colour does.
The heads sit at eye level or above, which is why this is the format for entrance halls, receptions and rooms with an audience. From a distance the outline is what registers, and a straight stem holding a large bloom above the rim gives a clean silhouette that a rounded hand-tied bunch cannot.
Small flats work against all of that. A tall vase takes the only free surface and gets caught by every passing sleeve. The flowers get moved, and long stems dislike being moved. Nothing about the bouquet is wrong in that situation except where it ended up.

The build follows from the room. A vessel holding about half the stem gives the balance, and anything shorter turns a long-stem rose into an expensive short one.
Where the height pays off here
Villa architecture on this island suits these roses better than most homes do. Open living spaces have wall consoles, wide entrances and floor area that a tall arrangement can occupy without being in anyone's way. Nusa Dua hotel rooms and Jimbaran wedding venues take them for the same reason, since both are read from a distance and from standing height. Ubud dinners are the harder case, because the flowers end up on a table where people are talking across them. We usually build lower for those and keep the long stems for the entrance.
We work 9 AM to 10 PM. Seminyak, Canggu and Sanur take 90 to 150 minutes, while Uluwatu, Tabanan and the outlying villas take up to 3 to 4 hours.
Long stems make the road harder than it looks. A large head on a long lever swings during a journey, and without a firm collar and a protective cone the outer petals bruise against each other before the box is opened. Above 30 °C and in high humidity we use firm wrapping and a cooling element, which does double duty here. The wrapping that holds the heads apart is the same wrapping that keeps the heat out.
Imported roses run at 60 to 90 cm and Ecuadorian stems reach up to 120 cm. The difference is more than length, since a bigger head also takes longer to open and needs more water to do it. On a long route to Tabanan we sometimes recommend the shorter build for that reason alone.

Presentation is the other thing height changes. The bouquet lies along the forearm instead of being held out at arm's length, and the recipient takes it the same way, which is why photographs of these bouquets always look staged even when they are not. Anyone travelling on with one should know it will not fit upright in a car boot. It will not lie across a back seat either without the heads hanging over an edge.
So describe the room before you describe the bouquet. If there is a console, an entrance hall or a wide terrace, this is the group that earns its money. If the flowers are going onto a dining table, say so and we will build across rather than up.
