### Edible bouquets in Bali: warmth, the fridge and the question nobody asks This is a gift with a clock on it, and the clock runs faster in a warm room. Heat softens anything with chocolate in it. Dry moving air works on anything fresh. Part of the contents of a mixed build wants a fridge rather than a windowsill, and the frame holds its shape only until the first skewer comes out of it. None of that is a defect. It is simply what the format is, and it is the reason these are built close to the moment they are handed over instead of kept ready on a shelf. The practical consequence falls on the recipient rather than on the sender. Take it apart, share it, put half of it away. A cut bouquet asks for a vase once and then leaves you alone; this one asks for a decision on the evening it arrives, and that changes who it makes a good present for. Somebody living alone, who does not enjoy food sitting about waiting its turn, is a harder case than a house with four people in it. > "Half the questions I get about these are really about the fridge. Here it can be a present that cannot be eaten at all. Nuts, sugar, dairy in a filling, a child's age, someone halfway through a course of treatment: all of that gets settled before the order rather than discovered at the door. Asking a mutual friend takes a minute. Apologising afterwards takes longer and does not fix the gift. A shared office arrangement makes the problem worse, because it is opened in front of everybody and refusing a piece of it in public is awkward. We would rather build two smaller pieces for a room where somebody has a restriction than one large piece that half the room watches being declined. #### What the island adds to the clock Above 30 °C in high humidity we use firm wrapping and a cooling element, which buys time without stopping the count. Between November and March the box stays closed until the courier is under cover, and in the drier months from April to October the sun does more damage than the rain ever did. Then there is the drive. Seminyak, Canggu and Sanur sit in a 90 to 150 minute window, while Uluwatu, Tabanan and remote villas take up to 3 to 4 hours. That second number decides the contents as much as the budget does: sealed confectionery, dried fruit and nuts hold up over a long run, and fresh fruit belongs on the short one. We work 9 AM to 10 PM on GMT+8, and for an evening handover we would rather start the build in the afternoon.
