### Sweet and chocolate bouquets in Bali: the room decides more than the recipe Chocolate is the one ingredient with an opinion about where it is standing. Above 30 °C, in the humidity this island runs at, warmth softens it and creases the wrapper, and as the piece cools the fat rises to the surface as a pale bloom. The taste barely changes. The look changes completely, and a guest reading that bloom sees a gift that went wrong somewhere. So the build follows the thermometer. Firm centres, caramels and sugar shells make the body of the arrangement, chocolate sits in the top rows where it gets eaten first, and the box travels closed with a cooling element and a firmer wrap than a flower box would get. It comes off windowsills and away from anything that runs warm. A fridge is not the shortcut it appears to be either, since condensation on a cold surface leaves the same pale film, only faster. > "People ask us to keep it in the fridge until the guests arrive. That does more harm than the drive did." > (JFLOO florist) Three things that shorten the life of one of these: - An hour standing in direct sun at a villa gate. - A closed car left in the open while a courier goes up to another address. - A cold shelf, then a warm room, then a cold shelf again. The other half of the problem is the wait at the far end. A box standing sealed at a gate while the guests are out costs more than the drive did, and there is no packing that fixes an afternoon in the open. Where the recipient is not going to be in, we would rather leave the box with somebody who is, or move the delivery to an hour when somebody is. Season shifts the odds without changing the rules. The drier months from April to October are kinder to the format, and from November to March the humidity does most of the damage that heat gets blamed for. Neither season makes a soft filling a good idea here. #### The minute it gets opened Nobody stands one of these in a corner. It goes on the table, it is dismantled, and the person who received it does the giving out, which is a pleasant thing to hand somebody at a dinner in Ubud or a birthday at a hotel in Nusa Dua. That minute is the whole reason to choose this over a box. Two things follow from that for anyone ordering. The arrangement should give up its pieces easily, so that pulling one skewer does not bring the front row with it, and there should be enough of them for the number of people in the room. A bouquet that looks generous and empties in thirty seconds reads as smaller afterwards than it did on arrival. It also sets a deadline. The arrangement has to be at its best when it is opened rather than when it is delivered, so we build close to the hour of the handover instead of first thing in the morning. Distance is the other half of that calculation. Seminyak, Canggu and Sanur sit in a 90 to 150 minute window, while Uluwatu, Tabanan and villas off the main roads take 3 to 4 hours, and on the longer runs we would rather agree an hour than a half day. Ask about nuts and dairy before you order, not after.
