### Garden spray roses in Bali: the address decides the build The variety sits between two things most people already know. It has the rounded, many-petalled cup of a garden rose and the branching stem of a spray rose, so every stem carries several small cups instead of one large one. That single fact is what makes it easy to route and hard to photograph from a distance. Which is why the first question in the workshop is the address. A box for a dinner in Ubud and a box for a ceremony in Jimbaran leave here looking like two different orders. Four kinds of address cover most of the week. An ocean villa where the courier reaches the gate and hands over in person. A hotel in Nusa Dua where the box goes to a counter first. A table booked for the evening in Ubud. A venue in Jimbaran where the flowers have to look the same at six in the evening as they did at ten in the morning. #### Against peonies, and when a peony still wins The resemblance is what sells this flower, and the limits of it are worth stating. A peony head is much larger and opens into a loose bowl with visible movement between the petals. Seven stems of it fill a table on their own. Garden spray roses never do that. They give a mass of small spheres, denser and tidier, with the outline holding to the end instead of collapsing. The trade goes the other way on season and stamina. Peonies come through in season and go over within days of opening, while these roses are grown under glass all year and hold a full week without drama. Order peonies when the point is one big soft gesture at a single moment. Order these when the arrangement has to last a whole day, a ceremony that starts late or a counter nobody touches until the weekend. The difference shows up in the last two hours of an event rather than the first two. A wedding day needs the second one. Before we build, we ask four things: - Where the flowers stand. A counter, a long table and a bedside surface each take a different height. - Whether anyone carries them in front of an audience. - What time the photographs happen, if there are photographs at all. - How far the address is from Seminyak. #### Windows, hours and the money Hotels take the box at reception. The St. Regis Bali Resort, The Legian Seminyak and Mandapa, a Ritz-Carlton Reserve all work that way, so the guest name and the room number should come with the address. Without them a box waits at a desk while somebody makes phone calls. Seminyak, Canggu and Sanur sit in a 90 to 150 minute window. Uluwatu, Tabanan and remote villas run to 3 or 4 hours, which is the reason we push those addresses towards the morning. Delivery hours are 9 AM to 10 PM and orders start at 650000 IDR.
