### Vegetable bouquets in Bali: say out loud that it is food The commonest way this gift goes wrong has nothing to do with how it was built. Somebody receives it, treats the arrangement as decoration and leaves it standing on a table, and by the time they change their minds the cut faces have darkened and part of it is no longer worth cooking with. It stands on its own without a vase, which is exactly what encourages that mistake. One sentence at the handover prevents it. Taken apart properly, the arrangement works like any bag of market produce. Wash everything, trim the skewer punctures off, and the contents go into a salad or a pan the same evening. Herbs are the exception worth a separate mention: pulled out and stood in water on their own, they outlast every other part of the bouquet by days. > "Write it on the card. The catalogue starts at 650000 IDR with payment through QRIS, GoPay, OVO, DANA or cash to the courier, and orders run from 9 AM to 10 PM. #### Heat, humidity and the length of the road This is the least patient thing in the edible part of the catalogue, and the island does not make it easier. Sideways pressure bruises, cut faces darken in open air, and above 30 °C with the humidity here both happen faster than anyone expects. The box goes out with a firm wrap and a cooling element, stands upright the whole way, and is built on the day it is given rather than the evening before. Distance then decides the rest. Seminyak, Canggu and Sanur sit inside a 90 to 150 minute window, which this format handles without trouble. Uluwatu, Tabanan and villas off the main roads take 3 to 4 hours, and for vegetables that is a long time to be in a box, so we say so when the order is placed instead of after it arrives. Season shifts the margin rather than the rule. April to October is drier and kinder to everything we send. From November to March the air itself works against a cut surface, and a bouquet left open on a terrace for an afternoon shows it. Villas are where this format is at its best, because there is usually a kitchen within a few steps of wherever the bouquet is opened. Ubud dinners work the same way when the host is the one cooking. Waiting is the one thing it cannot do. A box standing at a gate for an hour in the sun costs more than the whole drive before it, so we want a phone number for somebody who will actually be there rather than a surprise delivery to an empty villa. What goes into the arrangement changes with the length of the run as well. For a long address the dense and thick skinned items stay in the main body, anything soft moves to the top row where it comes off first, and the core inside is built stiffer than it would be for a short delivery. Tell us the hour the recipient will be there and whether the address has a kitchen. We will build to that hour, keep the softest items out of the arrangement if the drive is a long one, and put the herbs where they can be pulled out first.
