### Hyacinth bouquets in Bali: a flower you smell before you see it Most flowers announce themselves visually. Hyacinths reach the doorway first and the eye second, and anyone who has carried a wrapped bunch through a house knows exactly how far that scent travels. It is sweet, dense and slightly cold underneath, closer to wet earth in early spring than to anything sold in a bottle. Scale is the part people misjudge. A single stem carries dozens of small bells packed along a thick spike, and every one of them is working. #### Choosing the room Three stems will fill a small kitchen the way a scented candle does, and ten will make it hard to taste the food. An entrance hall handles them well, since nobody stays there long and the smell greets people arriving. Living rooms work if the doors open onto a terrace, which on this island most of them do. Bedrooms are the classic mistake. The scent thickens overnight in still air, and most people wake with a headache instead of with spring. Cars are worse again, and so is any closed room with a fixed set of people sitting in it. Neither can be aired properly and neither lets anyone move away. Cool rooms are this flower's natural setting, and Bali does not have one. Warmth speeds the bells open and shortens the display by days. Above 30 °C the perfume comes out all at once instead of building through the week, and direct sun does the same thing faster. A hall table out of the sun, in a room with air moving through it, gives the longest run and the steadiest scent. Four things worth telling us with the order: - The room. A hall, a terrace, a bedroom or a closed office: the answer changes what we send. - How many people use that room. Scent that suits an empty hall does not suit a family kitchen. - Whether the doors stay open. For a villa with an open terrace we will happily send more stems. - The week. This is a forced-bulb crop with a season from midwinter through early spring, and the colour choice narrows as it runs out. #### Getting them there Seminyak, Canggu and Sanur take 90 to 150 minutes; Uluwatu, Tabanan and the villas further out take up to 3 to 4 hours. Above 30 °C and in the humidity that comes with it, we use firm wrapping and a cooling element. A hyacinth is sturdier in transit than it looks, since the bells are small and the stem is thick, so heat is the only real risk on a long run out to Uluwatu. The bulb is worth a sentence of its own. A stem sold with the bulb still attached keeps drinking from the base plate and outlasts a cut one, which is why hyacinths often turn up planted or set in a shallow bowl instead of tied into a bunch. On a villa where nobody is going to change water daily, that is the version to ask for. Water otherwise goes shallow and gets changed often, since the fleshy stem softens wherever it stands. Colour is worth one line.
