Every complaint we get arrives in the first hour, when the lid comes off and the flowers inside are hard pink-green balls the size of a walnut, nothing like the picture in the catalogue. That is the correct state for a delivered peony. Knowing it before the lid comes off saves the whole gift. The reason sits in the journey. Peonies get one short season wherever they are grown, stems that travel are cut as a tight ball and cooled, and they are built to hold that way for days on the road. A soft open head would not reach this island in a condition anyone would pay for. Getting the box to the door is the part we control. Seminyak, Canggu and Sanur run on a 90 to 150 minute window. Uluwatu, Tabanan and the villas further out take up to 3 or 4 hours, and those addresses are better booked in the morning, since a box riding around in a warm car all afternoon arrives further along than anyone intended. Above 30 °C and in the humidity that goes with it, the box travels with firm wrapping and a cooling element set against the wall of the box. Four ways these orders usually come in: - A villa in Seminyak or Canggu, delivered the same day. - A remote address towards Uluwatu or Tabanan, where we ask for the villa name, the gate and the person who will open it, and where the earlier slot is worth taking. - A wedding at Jimbaran, ordered well ahead and built to be open on the day. - A dinner in Ubud. Two days of lead time usually covers it. From November to March the box turns up wet on the outside. Nothing inside it changes, but the wrapping stays on until the whole parcel is under a roof and the stems can be lifted out dry. #### Warmth is the switch, and here it is already on A tight bud opens on temperature, not on the calendar. In a cool room it can hold almost still for days. In a warm one it unfolds within a day, sometimes overnight, and this island supplies the warm room by default. That reverses the usual instructions. In most places the work goes into getting peonies open in time. Here the work goes into slowing them down, which means the coolest room in the villa, the air conditioned bedroom rather than the open living space, and a vase kept off the terrace. The rest of the handling is small. Strip the lower leaves, since foliage competes for the same water. Use warm water if the heads are wanted open sooner and ordinary water otherwise. There is a manual trick for a stubborn head. Roll the closed ball gently between your fingers to break the seal of dried nectar gluing the outer petals together, then leave it alone and let it get on with it. One kind of bud never opens at all. A head that feels like a stone and gives nothing under light pressure was cut too early in the field, and no amount of warm water, plant food or patience changes that.
