One stem can stay whole to hold a mass, or come apart into four or five short sprigs that go in one at a time between larger flowers. Roses cannot be taken apart like that. That single property is why dianthus turns up in so many mixed bouquets without ever being the reason somebody ordered one. It goes in last, it fills what the large heads left open, and nobody who receives the bouquet mentions it. #### What it sits well with Texture is the argument. Dianthus petals are matte and finely cut, imported roses are smooth and reflective, and beside each other both look more like themselves. Against another matte ruffled flower the effect disappears and the two blur into one surface. Scale works the same way, since small heads need something large nearby before they read as small at all. Macrophylla hydrangea and the Ecuadorian roses at 120 cm are what it works hardest beside here. Ranunculus and lisianthus sit much closer to it in size, and a build made only of those goes soft to the point of vagueness. Colour is where it gets misused. Bicolour cultivars with a dark edge to every petal are busy in bulk, and a bouquet made entirely from them looks patterned rather than floral, so most builds keep them as accents among plain heads. Two weeks is ordinary, and in a cool room with clean water it runs further, mostly because the cluster opens in sequence and there are always side buds still coming while the front head ages. Pull the spent heads out one at a time rather than replacing the bouquet, and it holds a shape down to the last sprig. That habit is worth explaining at the door here, because most of the addresses are temporary. A guest with ten days left will keep a bouquet going if somebody has told them to take the finished heads off, and will bin the whole thing on day four if nobody did. #### What the island adds Seminyak, Canggu and Sanur take 90 to 150 minutes, while Uluwatu, Tabanan and the villas further out take up to 3 to 4 hours. We work 9 AM to 10 PM. Above 30 °C, and in the humidity that comes with it, we use firm wrapping and a cooling element, which on dianthus is insurance rather than a requirement. The rainy months run November to March and the drier stretch is roughly April to October, and neither changes what happens to this flower in a box. Access is the slow half of most runs. A gate opens, somebody who is not the recipient takes the box, and it stands somewhere for a while before it reaches a vase. Dianthus is one of the few things on the list where that gap costs nothing.
