### Gypsophila bouquets in Bali: the honest warnings first There is a smell, and it divides people. Sweet with a green, slightly sour edge underneath, it grows more noticeable in a closed room towards evening, and a whole armful is far stronger than the few sprigs anyone remembers from a mixed bouquet. Some people find it faintly musty. It fades considerably as the bunch dries, so if the scent bothers a recipient, the dried stage is the one they will enjoy. Airing the room deals with most of it, which on a villa with terrace doors happens without anyone thinking about it. Buying a smaller bunch deals with the rest. The second warning is mess. Tiny dry flowers and side shoots drop from the base of the stems from the first day, and they carry on dropping quietly for as long as the bunch is in the house. A florist who has cleaned the stems properly reduces this a great deal. Nobody eliminates it, so a hall table beats a dining table. There is no daily water change to miss and no bent neck to prop up, and neglect at the right moment turns the bunch into its dried version instead of into a bin bag. Three addresses where that lands well: - A villa rented for a month, where nobody wants a daily job. - A first apartment in Berawa or Canggu, where the room is larger than the furniture in it. - A housewarming, where the point is filling a space. The same qualities make it awkward for a formal occasion, where the recipient expects to see money on the table. Gypsophila reads as generous in volume and modest in value, and for some occasions that is the wrong way round. Scent behaves differently by room here. A terrace carries it off entirely, a closed bedroom concentrates it overnight, and the same armful can be the best or the worst thing in a house depending on which of the two it lands in. Most of these go out as housewarmings and as gifts for long stays. The bunch itself is one of the sturdier things we carry, since thin woody stems have little to lose on a long drive. Weight on top of the box is the only thing that ruins it, so nothing gets stacked on a gypsophila delivery, and the box goes out with height to spare. Drying works here too, and it needs air more than it needs darkness. Once it is dry, sunlight is the only real enemy left.
