### Spring bouquets in Bali: a loose shape with a long road ahead of it The island runs on two seasons instead of four. Drier months fall roughly between April and October, the rains come from November to March, and a spring bouquet here is therefore a palette and a manner rather than a date on a calendar. What decides its condition is the journey. Above 30 °C and in high humidity we use firm wrapping and a cooling element, which matters more for soft early stems than for anything else we send out. Humidity itself is on the bouquet's side: cut ends dry slowly in this air, and a stem that would seal up in an hour somewhere arid keeps drinking here. Rain changes the handling rather than the timing. From November to March the heads travel covered and the paper comes off indoors, because water dries on a pale petal with a visible mark and the mark does not wash out. Seminyak, Canggu and Sanur sit inside a 90 to 150 minute window, which suits this format well. Uluwatu, Tabanan and the remote villas run up to 3 to 4 hours, and a loose armful is the wrong thing to send unmodified over that distance, so those bouquets go out tied tighter and with the outer stems drawn in. The recipient loosens it in the vase, and it opens back out into the shape it was meant to have." > JFLOO florist Once it is inside, three habits carry it: - Cold water, filled low in the vase and changed daily. - The vase away from the window and out of the flow of an air conditioner. - A clean glass every time the water goes, since the film on it blocks the cut faster than heat does. #### Where this format falls short It does not photograph like a structured arrangement, and it never will. Soft stems refuse to sit in a tight dome, the outline stays open, and a client expecting a compact ball of heads will be disappointed by the shape before getting anywhere near the colour. The second limit is supply. Seasonal peonies and ranunculus arrive in waves, what is on the bench changes from one week to the next, and no honest florist will promise a particular seasonal stem the way they can promise a rose. If the flower itself matters more than the gesture, imported roses, orchids and macrophylla hydrangea are the sensible answer, because they are here regardless of what the season is doing. There is one occasion where the format is simply wrong. A ceremony at Jimbaran needs a silhouette that holds from the setup through to the last photograph, and a loose armful spends the evening quietly rearranging itself. #### Where it works instead A dinner in Ubud, a villa where somebody is staying for a fortnight, an ordinary evening in Canggu with nothing behind it. Lisianthus keeps opening its later buds for days after arrival, which gives the bouquet a second half rather than a decline, and imported roses at 60 to 90 cm hold the frame that the soft material moves inside. Send the recipient's address with a note on where they are likely to put it. A room with air conditioning takes a different cut from an open terrace, and on this island that one line changes what goes into the bouquet more than the choice of colour does.
