### Winter bouquets in Bali: the frame or the flowers Two questions settle this order before anything is cut. Is the arrangement there to be looked at for one evening, or to hold a corner of a room long after the occasion has been cleared away. Those answers build two different objects. For an evening, fewer structural stems and more open flowers. Tropical foliage at close range reads as heavy, and a table arrangement leaning on it buries the flowers instead of presenting them. Seasonal peonies already showing colour, macrophylla hydrangea cut firm at the edge, imported roses taken a little further open: all of that is chosen for how it looks tonight. For the long stay, the reverse. A base of tropical foliage fixes the outline on the day it is made and keeps it while the fresh material comes and goes, with a small number of strong heads set into the gaps. Orchids earn their place here more than anywhere else in the seasonal range, because they hold longer than the rest of the fresh part and their line survives being surrounded by mass. Lisianthus sits between the two answers. It arrives with buds at different stages on the same stem, so it opens over several days and gives the arrangement a second half rather than a decline, which is useful when the occasion runs across a week rather than a night. > "Tell us the day it has to peak on. An air conditioned interior is dry with moving air, and dry moving air takes water out of a petal edge faster than plain heat does, so a vase standing in the flow from a vent starts dropping within days. Set it out of the draught and the same arrangement runs for weeks with nothing else changed. An open terrace is the opposite case. Above 30 °C and in high humidity the fresh part drinks hard while the structural part is untroubled, so terrace builds get a deeper reservoir and fewer thirsty heads. Macrophylla hydrangea is the first thing that comes out of one, since it drinks through the petal as well as the stem and a terrace gives it nothing back. The replacement habit is what makes the format worth the money. Roses finish, they lift out, fresh ones go into the same gaps, and the outline never changed. Ecuadorian roses up to 120 cm are the exception we rarely use in these, because their length wants a tall vase rather than a frame that is already holding its own shape. #### The months this lands in From November to March the rain runs, and that is when most of these go out. A structural arrangement is the easiest thing we send in those months: the frame does not mind being covered, the heads travel closed, and the whole build tolerates a wait at the door in a way a loose bouquet cannot. Uluwatu, Tabanan and the remote villas take up to 3 to 4 hours, and this format handles that distance better than anything else on the seasonal list, which is why it goes to the far addresses so often.
