It closed the gaps, softened the outline, and nobody ordered it on its own. Then it moved to the front of the arrangement and started being sold by the armful, which changed nothing about the plant and a great deal about what people expect from it. What you get is texture and volume rather than individual flowers. Nobody studies one bloom on a gypsophila stem, because at that scale there is nothing to study. #### What the format is good at Volume for the money is the obvious part. Each stem branches into a cloud roughly the width of a palm, so a basket reaches a generous size on a modest number of cuts, and it holds that size for the whole of its life rather than shrinking as flowers get pulled out of it. Tone is the part people choose it for without saying so. White gypsophila is a quiet gift: no declaration, no romantic obligation, no formality, which makes it usable for a colleague, a neighbour, a teacher, a new baby or a housewarming without anybody having to interpret it. Then there is the ending, which is genuinely unusual. The flowers dry where they stand, keeping their shape and their spread, so the basket does not have to be thrown out on a particular day. You stop topping up the block and the arrangement carries on as a dry one, in the same spot, looking very nearly the same as it did. Seminyak, Canggu and Sanur are 90 to 150 minutes from the workshop, and Uluwatu, Tabanan and the remote villas take up to 3 to 4 hours. This is one of the few arrangements for which that makes no difference: small flowers do not bruise and branching stems do not snap, so it arrives holding the spread it left with.
