### Baskets with gypsophila in Bali: what you are actually buying Gypsophila spent decades as the material that went between the roses. It closed the gaps, softened the outline, and nobody ordered it on its own. Then it moved to the front of the arrangement and started being sold by the armful, which changed nothing about the plant and a great deal about what people expect from it. What you get is texture and volume rather than individual flowers. Nobody studies one bloom on a gypsophila stem, because at that scale there is nothing to study. #### What the format is good at Volume for the money is the obvious part. Each stem branches into a cloud roughly the width of a palm, so a basket reaches a generous size on a modest number of cuts, and it holds that size for the whole of its life rather than shrinking as flowers get pulled out of it. Tone is the part people choose it for without saying so. White gypsophila is a quiet gift: no declaration, no romantic obligation, no formality, which makes it usable for a colleague, a neighbour, a teacher, a new baby or a housewarming without anybody having to interpret it. Then there is the ending, which is genuinely unusual. The flowers dry where they stand, keeping their shape and their spread, so the basket does not have to be thrown out on a particular day. You stop topping up the block and the arrangement carries on as a dry one, in the same spot, looking very nearly the same as it did. Four things about the address change what we build: - Whether the basket stands indoors or on an open terrace, since wind takes an airy arrangement apart faster than a dense one. - How far the courier carries it from the gate, because the spread is wide and doorways are not. - Whether the recipient lives here or is leaving at the end of the week, which decides whether the dry phase is worth anything to them. - Whether anything larger is wanted in the middle, since this flower gives no single big bloom. That last answer changes the gift rather than the price. Macrophylla hydrangea fills volume in one head, imported roses at 60 to 90 cm sit underneath as solid colour, orchids give a line above the cloud, and ranunculus and lisianthus add detail that only reads from a chair. The proportion of gypsophila to everything else decides which of two quite different arrangements arrives at the door. Humidity here is worth a note. The drier season runs roughly April to October and the rain from November to March, and in both of them a block gives up water slowly, so a fresh gypsophila basket needs topping up less often than almost anything else we build. The dry phase, on the other hand, arrives later than it would in a dry climate, and on a terrace it may not arrive cleanly at all. Seminyak, Canggu and Sanur are 90 to 150 minutes from the workshop, and Uluwatu, Tabanan and the remote villas take up to 3 to 4 hours. This is one of the few arrangements for which that makes no difference: small flowers do not bruise and branching stems do not snap, so it arrives holding the spread it left with.
