One hyacinth spike perfumes a small room on its own. A basket packed with them fills a whole villa, and the scent does not disperse so much as accumulate, which is why this is the one category where the address changes the recipe rather than only the size.

Open living rooms are where the flower belongs. A villa with the terrace doors open all day takes as many spikes as you want to pay for, and the scent reads as exactly what it is meant to read as.

A bedroom, a car, a windowless office or a small kitchen is the opposite case. By the evening it has become too much, some people get a headache from it, and eating beside it is unpleasant.

The sensible build carries two or three hyacinths and takes its volume from something else. Orchids give a line above the spikes, ranunculus and lisianthus supply fine detail at close range, macrophylla hydrangea fills width in a single head, and tropical foliage closes the rim. Imported roses at 60 to 90 cm sit underneath as solid colour. The scent is present in an arrangement like that, and it stays a note rather than becoming the room.

The count is the only decision that cannot be undone afterwards. A basket can be moved to another room, stood further from a chair, or put outside for an evening, and every one of those helps. What nobody can do is pull a spike out of a soaked block and expect the arrangement to close up behind it, so the number gets settled at the order stage and then stays.

For a dinner in Ubud or a table at a Jimbaran venue we usually build with a single spike and keep everything around it neutral. The scent then reaches somebody only when they lean towards the flowers, which at a table with food on it is the whole of what anyone wants from it.

Living with it once it is standing

Keep the basket cool and out of a warm draught. Warmth pushes the bells open from the bottom of the spike upwards in a rush, and the whole scent of the arrangement gets spent in a couple of days rather than spread across a week, which on this island means a shaded corner rather than a sunny terrace edge.

Three habits cover the rest:

  • Pinch off spent bells at the base of the spike with your fingers while the top is still opening.
  • Pour water slowly at the edge of the block until it stops taking any, if the arrangement stands in foam.
  • If the bulbs are planted rather than cut, water at the compost and keep it off the flowers.

The middle one is the only daily task, and it takes seconds.

Humidity here works in the arrangement's favour in one respect and against it in another. The block gives up water slowly, which is helpful, and both seasons are warm, which speeds the opening up. The drier months run roughly April to October and the rain from November to March, and above 30 °C we wrap firmly and pack a cooling element for the drive.

That drive is worth planning around. Seminyak, Canggu and Sanur are 90 to 150 minutes from the workshop, while Uluwatu, Tabanan and the remote villas take up to 3 to 4 hours, and a warm vehicle for that long starts the opening before the basket has even arrived. For the long routes we build with the spikes tighter and greener than they will look on the day they are enjoyed.
