Very few peony bunches are only peonies. Something else is always worked in around them. What that something is doing tells you a great deal about what you are buying.

In season, when stems are plentiful, a bunch of nothing but heads costs about the same as a mixed one and looks far denser. Out of season the other material is doing structural work, holding a small number of expensive blooms apart so they do not look stranded inside the wrapping.

Neither approach is dishonest. It helps to know which one is in front of you. A mixed bunch contains fewer peonies than the photograph suggests.

Here that supporting cast is specific. Macrophylla hydrangea is the usual choice for width, since one head covers ground that would take three of anything else. Lisianthus and ranunculus sit between the peonies as spacers and hold their own shape without competing. Tropical foliage goes in sparingly, because a peony already carries a large leaf of its own and the bunch turns heavy fast. Seasonal peonies arrive here in batches, so what surrounds them changes with the shipment as much as with the design.

Orchids do something none of the others can. They draw a line across a bunch without adding mass to it, which is useful when the peony count is low and the shape needs help.

Weight, and the moment of handing it over

A peony head is heavy and the stem beneath it is soft. That combination makes a large armful awkward to hold for long, and it makes the whole bundle top heavy, so it tips the moment it is set down on a flat surface.

Fifteen peony stems pull the hand harder than fifteen roses.

For a handover where the recipient then has to move about, shake hands and carry something else, a compact bunch of seven or nine heads works better than a huge one. Large armfuls belong at home, on a table, where they can be put down and left. That distinction decides more orders here than colour ever does, because so much of what we deliver is handed over at a villa gate, a restaurant table or a wedding venue in Jimbaran.

Seminyak, Canggu and Sanur run in a 90 to 150 minute window, while Uluwatu, Tabanan and remote villas take up to 3 to 4 hours. Longer routes get the tighter buds, since an open head bruises against its neighbour on every bend.

We work 9 AM to 10 PM on GMT+8.

Humid air suits a peony better than dry air does, and petal edges hold well through an evening. Above 30 °C we pack firmly and add a cooling element. In the rainy season from November to March we build the extra time into the route at the loading end.

Ubud dinners are the one case where we ask twice about the format, since the bouquet usually travels on with the guest afterwards. Ocean villas and hotels in Nusa Dua are the opposite, with staff at the door and a vase somewhere in the building.
