35 roses in Bali: grading the heads, then getting them to the door

At five stems a difference in head size looks like character. At thirty-five it looks like a dent in the outline, because the eye compares the buds against each other whether anyone means it to.

The work therefore starts before assembly. Heads are sorted by size, the largest going to the outer ring so the edge of the dome does not fall inwards, the smallest tucked towards the middle where depth hides them. Stems get sorted by thickness in the same pass, since a mixed bundle will not hold a clean spiral. It is dull work and it is most of what separates a considered build from a rushed one.

A single variety usually behaves better at this size than a mix, and grading is why. One shade across thirty-five heads holds a flat, deliberate surface, while a mixed build has to have its sizes matched twice over before anyone can judge the colours at all.

Grading also decides how it survives the road.

The road, address by address

Seminyak, Canggu and Sanur come in at 90 to 150 minutes. Uluwatu, Tabanan and remote villas run up to 3 to 4 hours, and on those legs the bouquet stands in a vehicle without fresh water for most of an afternoon. Above 30 °C and in high humidity we use firm wrapping and a cooling element, and a graded bunch takes that treatment better, because even heads rest against each other evenly and nothing presses on a smaller neighbour.

The last few metres are where most of the damage happens. A garden path, a set of steps, an open terrace and a gate somebody has to unlock all come after the vehicle. Paper that got damp on that stretch loses its shape in a minute. From November to March we send more boxes than armfuls for exactly that reason. The drier season, roughly April to October, makes the walk easier without changing anything about the car.

  • Who opens the door, and whether that person will still be there an hour later.
  • Whether the house has a vessel wide enough at the neck, since a bundle of this count will not go into a narrow vase.
  • The stem length you want: imported roses come at 60 to 90 cm and Ecuadorian stems reach 120 cm, and the taller cut needs a taller vessel already waiting for it.
  • Where the bouquet ends up standing, because at this size nobody moves it twice.

What a graded bunch looks like when it arrives

Look at the outline from above first. It should run smooth all the way round, without a step where a smaller head sits beside a large one and without gaps filled by foliage.

Then turn it. A bouquet built to be photographed from one angle has a good face and a hollow behind it. Thirty-five heads give a builder plenty of room to hide that, which is why the turn is worth doing while the courier is still there.

The outline is not the only thing worth checking. Run a finger down the binding point, which should hold the bundle firmly without pressing into the stems, because a squeezed lower ring stops drinking within hours.
