A spiral needs turns, and five stems do not give you enough of them. The classic technique lays every stem across the last one at an angle so the bundle closes on itself and stands unaided, but that only begins to work somewhere above seven or nine. At this count a florist is doing something simpler and, in one respect, harder.

The parallel bunch

Most small counts are built straight instead of turned. One stem sits in the centre, slightly proud of the rest, and the other four gather round it a half head lower, which is what gives the bunch a domed top. Leaves come off the whole length that will sit inside the wrapping, since a leaf caught under the tie holds damp against the stem.
