Getting the size right for a milestone birthday
Orders for a round number date come in too small far more often than too large. On a screen an arrangement fills the whole frame, so the eye reads it as generous. Put the same arrangement in a room with forty people standing around a table and it turns into a centrepiece, which is a different and much smaller kind of present.
The correction is mechanical once you know it. Decide the size by the distance the flowers will first be seen from, then take one step up from whatever looked right in the photograph. A gift handed over across a villa terrace is seen from several metres before anyone gets close to it. Nothing about that judgement depends on the variety, which is why we ask about the room before we ask about the flower.

Colour obeys the same rule as scale. Fine texture, small florets and pale filler all dissolve at a distance, and what carries is a few large heads in one or two clear tones.
Evening light then edits the palette a second time. Deep burgundy goes almost black once the lamps come on, which is a real loss when the flower cost the most of anything in the build. Pure white flattens against a pale wall and reads as a gap in the arrangement. Warm cream, apricot and soft pink keep their character in most interiors, indoors and out, and they are what we reach for when the recipient is a parent or an older relative. Strong contrast works too, but it only holds together when somebody chose it deliberately.
Scale is the decision that outranks everything else.
What the island gives you to build with
Imported roses at 60-90 cm carry a room without any trickery, and Ecuadorian roses up to 120 cm exist for the handovers meant to be seen from the far end of a terrace. Macrophylla hydrangea gives volume faster than anything else per stem, which is exactly why it is worth ordering a day ahead. Orchids and tropical foliage do the structural work in this climate and keep doing it long after the softer material has given up.
Seasonal peonies, ranunculus and lisianthus come and go, and they behave like the delicate flowers they are. Humid tropical air is the reason. Above 30 °C and in high humidity we use firm wrapping and a cooling element, and even then a fully open peony is a flower with a short future on a terrace. If a particular bloom has to be in the arrangement, say so at the order stage while there is still time to source it.
The address changes the build as much as the recipient does. Jubilee flowers in Bali go out to ocean villas, Nusa Dua hotels, dinners in Ubud and resort addresses in Seminyak or Canggu, and those are four different jobs with four different road times. Seminyak, Canggu and Sanur sit in a 90 to 150 minute window. Uluwatu, Tabanan and remote villas take up to 3 to 4 hours, and a large piece for a remote address is ordered in the morning for an evening handover. We deliver from 9 AM to 10 PM, which covers a late dinner but not a surprise arranged after it.

A ceiling height, a table length, whether people will be standing or seated, whether the handover happens indoors or on open ground: those four answers size an arrangement more accurately than any picture saved from a florist on another continent.
