If the household leaves the island for a fortnight, foam dries out and cut stems finish long before anyone comes back, so the gift for that name is a preserved or potted one. #### Ordering inside a very short window Demand collapses into a few days at the end of December. Inside that window the stock decides more than the catalogue does. Imported roses at 60 to 90 cm and Ecuadorian roses up to 120 cm arrive in batches, and a batch either lands in time or it does not. A named variety or an exact shade is worth asking for a fortnight ahead. Closer in, the florist builds from what reached the workroom, and a substitution applies within one style rather than across it. Seasonal peonies and ranunculus disappear first. Macrophylla hydrangea and lisianthus last a while longer. Orchids and tropical foliage are still there at the end of the rush, which is why the final days lean on them, and why a gift built around them is the one we can still promise on the twenty ninth. The evening slots on the last days of the year are the first thing to close, and moving an address between the near run and the far one at that point means a new hour, which no van can fix.
