A white peony has no colour of its own to defend, so it takes whatever the room and the lens give it. That makes it the easiest shade to send and the hardest one to photograph, and on an island where a good part of what we deliver is photographed within the hour, the second half of that sentence is the one that causes trouble.

What a camera does to white

Phone cameras meter for the brightest thing in the frame. With white peonies that is the petal itself, so the exposure comes down, the background goes muddy, and the folded texture that made the flower worth photographing flattens into a plain white shape.

Two habits fix most of it. Shoot in soft indirect light rather than in sun, and give the flowers a mid-tone background, a grey wall or dark wrapping paper, so the sensor has something other than the petals to balance against.

Midday sun is the worst case of all. It flattens the folds, throws hard shadows between the heads and blows the top petals out completely, which on a bright terrace at noon happens in every frame.

Where it should stand once the pictures are done

A plain wall beats a bright opening, for the same reason it does on camera. The flower is the lightest object in the frame and needs something quiet behind it.

Heat then matters more than light. A tight bud opens in stages over several days in a cool room and runs through the whole sequence in one warm evening, arriving at a flat open rosette that starts dropping petals, and open-plan villas here rarely have a genuinely cool corner. Keep the vase out of the sun, away from the airflow of an air conditioner and off an open terrace where the sea breeze works on the petal edges all afternoon.

Give the stems a wide-necked vase and deep water, because peony stems are thick and stiff and will not sit in a narrow opening. Strip the leaves below the waterline, change the water daily and recut the ends on the slant each time.

What the island adds to all of this

Above 30 °C in humid air the buds move a stage faster than they would elsewhere, so the wrapping is firm, a cooling element travels with the crate, and the heads leaving the workshop are tighter than a cool-climate florist would send. We deliver from 9 AM to 10 PM.

Distance does the rest. Seminyak, Canggu and Sanur sit inside a 90 to 150 minute window, while Uluwatu, Tabanan and villas off the main roads take 3 to 4 hours, and the difference shows up as a stage rather than as an inconvenience.

White is also the shade that shows a rough journey. A pressed petal browns along the crease within hours, where the same mark on a pink variety would take a day to appear and might never be noticed, so the crate stands upright the whole way and the outer heads never touch a wall.

Peonies come to the island in seasonal batches and white varieties run out sooner than pink ones.
