At eleven stems no frame is needed. The stems lock one another and the tie holds the whole thing, which is exactly why this count travels well and survives being propped in a car footwell.

No frame means nothing to shift.

Larger counts are a different job. Past a certain size the outer stems carry no weight and slide, so a collar of greenery, a stem grid or a card cone goes in to keep the outline, and the bunch stops being a pure hand-tie. You can feel the difference by lifting one.

That is also where the price stops tracking the count. A framed bunch takes longer to build than an unframed one with the same flowers, and the extra time is real work rather than presentation.

There is one situation where we suggest a collar at this count anyway. If the bunch goes into a setting and will be moved more than once before anyone sees it, a light collar holds the outline through the handling.

What the road does with an unframed bunch

Seminyak, Canggu and Sanur come in at 90 to 150 minutes. Uluwatu, Tabanan and remote villas run to 3 to 4 hours. An unframed bunch takes the long leg without complaint. There is no collar to shift and nothing rigid pressing on a head. It travels upright in a bucket, and the last stretch on foot to a gate costs it nothing.

Above 30 °C and in high humidity we use firm wrapping and a cooling element. Heat opens a peony faster than a cool room does, so heads go out tighter on the long runs and further along for a dinner in Ubud the same evening.

Peonies here are seasonal, so out of season the shade comes from whatever consignment arrived. We name the tones standing in the workshop when the order goes in.

The rainy months from November to March change the booking rather than the build. Roads slow down, so this count goes out earlier in the day, and an unframed bunch loses nothing by waiting in a bucket at the far end.

Three things to say before we build.

  • Which day, and whether it can move.
  • Whether the bunch is handed over or left in a room.
  • The shade, since a single tone is what makes this count read as built.

Living with it afterwards

Keep the tie on when the bunch goes into water. It holds the spiral, and a bunch that has been untied never sits the same way again in a vase.

Trim through the whole gathered bundle in one cut so that the ends stay level. Check the water on the first evening rather than the second morning. A dense gathering of thick stems empties a vase faster than the same count of anything thin.

In this climate that first check counts for more than it would elsewhere. Warm rooms drink faster, and a bunch left to find its own level over two days is a bunch with a dry cut on the outer stems.
