Peonies by stem count in Bali: the number grows after delivery

Whatever number you settle on, it does not stay that size. A closed ball opens to about three times its width on warmth, so the bunch leaving the workshop is the smallest version of itself anyone will ever see. On this island the change happens fast.

A bunch that looks slightly airy in its wrapping will be full within three days. One that looks perfectly packed on the doorstep will be crushing itself by then.

The fix is to judge density against the vase rather than against the photograph, and three habits cover it:

  • Buy for the container you know about, and accept visible space between the heads on day one.
  • Change the water completely instead of topping it up, since a thick peony stem clouds it fast in a warm room.
  • Strip the lower leaves off entirely, because they drink hard and rot first.

One thing is worth confirming before ordering by stem count in a mixed bunch. The number usually refers to the peonies alone, with everything else counted as filler. The difference between five stems in total and five peonies among roses shows the moment the paper comes off. Here the second is far more common, because seasonal peonies arrive in batches and the gaps get filled with macrophylla hydrangea, lisianthus and ranunculus. Ask which of the two the price covers before agreeing to it.

Those companions behave differently as the days pass. Ranunculus and lisianthus barely gain width at all. A bunch built around a small peony count therefore keeps its proportions much better than one that is almost entirely peonies.

Peonies grow, their neighbours do not.

What the island adds

Warmth above 30 °C and high humidity speed the opening up, which is the whole reason we ask about the container before agreeing a number. Ecuadorian roses up to 120 cm are worth mentioning as a counterweight, since they hold their height while the peonies spread outward. Imported roses at 60 to 90 cm do the same job lower down. Tropical foliage goes in sparingly, because the peony leaf is already large.

In the rainy season from November to March we add route time. A bunch that will sit in a van for an extra hour goes out with tighter buds.

Season leaves a mark on the stems themselves. Field grown summer flowers often arrive with ants on the buds, drawn to nectar on the outer scales, doing no damage and shaken off outdoors in a second. Somebody opening a large summer count is far more likely to meet them than somebody unwrapping five imported stems. It is worth a line in the message that travels with the flowers.

Ocean villas and hotels take the large counts because they have the surfaces for them. Rooms in Nusa Dua and resort addresses around Seminyak handle a wide arrangement without anyone hunting for a container. Ubud dinners and wedding venues in Jimbaran usually want several smaller counts along a long table.

Peonies by stem count in Bali are quoted against the batch on the bench that morning. Tell us the number, the area and what the flowers will stand in. If nothing at the address will hold them, we build the same volume as two arrangements. That is cheaper than solving it at the door.
