The climate here is humid and tropical, with a drier stretch from roughly April to October and rain from November to March. Humidity is kind to peony petals and warmth is not, so above 30 °C we wrap firmly and add a cooling element. Almost everything else about a count this size is decided by the road it has to travel.

Seminyak, Canggu and Sanur run in a 90 to 150 minute window. Uluwatu, Tabanan and remote villas take up to 3 to 4 hours, and a bouquet on that route leaves the bench a full stage behind one going to Seminyak.

Two mistakes account for most of the disappointed calls. The first is asking for open flowers when the date is still days away, because peonies move from full bloom to falling petals fast and a bouquet cut open on Monday is finished by Thursday. The second is ignoring stem length: long stems suit a house with a tall vessel and daily trimming, short ones suit a box or a low bowl, and the wrong choice leaves somebody improvising at the sink. Neither shows on a small count and both show plainly on twenty-one.

Say where the bouquet is going and what it is for. Twenty-one heads bound for a villa terrace, a restaurant table or a birthday in a hotel room call for different varieties and different stages, and we can only judge that if we know. Give a colour range instead of a single name, because a batch of seasonal peonies is one variety in one shade and the shade changes with the shipment. Mention scent either way, since it follows the variety and a photograph carries none of it. State the date the flowers should look their best, which is often a day or two after the date you want them delivered.

That last line saves most orders.

Each of those replaces something we would otherwise have to guess. A terrace handover in the middle of the day gets tighter heads than an evening one indoors. A range lets us build from the best batch on the bench instead of chasing a name through the shipment list. A peak date lets us work backwards through the road, the weather and the opening, which on this island can add up to a full day of difference.

Rain in the wet months is the variable none of us controls. From November to March we load the long runs earlier and tell you if the hour has to move.

Ocean villas and the hotels in Nusa Dua are the addresses where a long stem and a tall vessel work well. Ubud dinners and Jimbaran wedding venues usually need the short version, since the bouquet leaves again with a guest at the end of the evening. Houses in Canggu and Berawa fall either way, and those are the orders where the question genuinely has to be asked.
